Sunday Brunch

Crunchy Potato Pancakes Benedict
When I arrived home yesterday afternoon, my husband told me that the asparagus plants that we planted last year had produced two skinny sticks of asparagus. Now fresh asparagus is too good to waste, even if it is just two little skinny sticks. Hopefully there will be more next year.
Being half German and half Danish, my husband loves a good potato pancake. Mine are not exactly traditional, but they are all gone, nothing left for a little snack!
What you will need;
2 Yukon Gold Potatoes
1 small onion
1 Tablespoon of flour
Salt to taste
Pepper to taste
Wash the potatoes well. I like the skin so I don't peel them. Once washed, grate them in a food processor, so much easier than doing it by hand. After the potatoes have been grated, pick up handfuls and squeeze out the excess liquid and then put into another bowl. Once all of the potatoes have been squeezed, you can either discard the liquid or save it and use it in a soup. Mix in the flour, salt and pepper.
Pour oil in a skillet, about a 1/4 cup and heat. Form patties by hand, make sure they are not too thick and place in hot skillet. Reduce the heat so that the potatoes will not cook too fast. Cook about 5 to 10 minutes on each side. Cooking time will depend on how thick your patties are. Turn and cook on the other side. Once golden brown remove from pan and drain on paper towels. 
The topping is quite easy;
1/2 cup of ketchup
red pepper flakes to taste
1 teaspoon of Worcestershire sauce
1/2 teaspoon lemon juice
Mix all ingredients together in a small bowl
I like poached eggs, but you could also fry your eggs if you like. My little skinny asparagus looks a little funny, but it tasted so good.
On each pancake place a poached egg, or fried, your choice. If you like, you could also add a couple pieces of bacon to the stack. If you have asparagus, and it is not fresh out of the ground, you may want to roast it a bit in the oven or do a quick parboil(place in boling water for just a minute or so). Top with the ketchup sauce and enjoy!

  2. Ahhh, the little asparagoids are so cute. Yes, my mother (an avid gardener) grew asparagus. It takes a few years to get going and then, watch out! I love love asparagus!
